The undisputed queen of Lake Zurich swims only during the summer months into the nets of commercial fishermen. Although they look like a salmon, the meat is more tender and the taste is much more delicate. Not to compare with the farmed ones.
We serve the lake trout cooked glassy, because only then it melts in the mouth and you experience the most delicate flavour.
Our lake fish are caught exclusively by Sämi Weidmann (Männedorf). The offer varies from catch to catch and all fish are served without bones.
