The super slow food of Lake Zurich!

The Albeli lives in much deeper, colder water compared to the other salmonids, whitefish and lake trout. This slows down the metabolism and growth of the albeli. The result is a firmer meat and a more delicate taste.

Albelis are suitable for baking and roasting. They can be heartily combined with chanterelles, herbs and even with bacon or Schüblig and still retain their character.

Our lake fish are caught exclusively by Sämi Weidmann (Stäfa). The offer varies from catch to catch and all fish are served without bones.
